Step-by-Step Instructions
  1. In a blender, combine cottage cheese, eggs, vanilla extract, salt, baking powder, and honey or maple syrup if desired. Blend on high for about 30 seconds until smooth.
  2. Place a non-stick skillet over medium heat and let it warm for about 2 minutes. Add butter or oil to coat the bottom of the pan.
  3. Pour 1/4 cup of pancake batter onto the skillet for each pancake, spacing them 2 inches apart. Cook undisturbed for 2-3 minutes until bubbles form.
  4. Gently flip each pancake and cook for another 2-3 minutes until golden brown and slightly puffed.
  5. Transfer cooked pancakes to a plate and cover with a towel to keep warm while cooking the remaining batter.
