  • 100 g Vermicelli noodles Cook according to package instructions.
  • 8 pieces Rice paper wrappers Ensure they are fresh.
  • 1 medium Carrot Shredded.
  • 1 medium English cucumber Thinly sliced.
  • 200 g Extra-firm tofu Cubed.
  • 1 small Jalapeño pepper Thinly sliced.
  • 1 medium Mango Cut into strips.
  • 1 medium Avocado Sliced.
  • 1 cup Fresh basil leaves
  • 1 cup Fresh mint leaves
  • 1 cup Fresh cilantro leaves
For the Peanut Sauce
  • 1/2 cup Peanut butter Natural preferred.
  • 2 tablespoons Soy sauce Use tamari for gluten-free.
  • 1 tablespoon Maple syrup Can substitute honey.
  • 2 tablespoons Lime juice Fresh is best.
  • 1 clove Garlic Minced.

Method
 

Step-by-Step Instructions
  1. Cook the vermicelli noodles according to package instructions, usually boiling for about 3-4 minutes until tender. Drain and rinse under cold water.
  2. Prepare your rolling area with a large, shallow bowl of warm water and a damp kitchen towel.
  3. Soak a rice paper wrapper in warm water for about 15 seconds, until pliable. Lay it flat on the damp towel.
  4. Center a handful of cooked vermicelli noodles on the soaked wrapper. Add a mix of the other ingredients.
  5. Fold in the sides of the rice paper and roll from the bottom up, sealing well.
  6. Serve the spring rolls immediately with creamy peanut sauce on the side.
