- In a large mixing bowl, combine the coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, and cilantro. Toss until evenly distributed.
- In another bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
- Pour the dressing over the salad mixture and gently fold until all ingredients are coated.
- Fold in all but a handful of the Chili Cheese Fritos.
- Top with reserved Fritos and serve immediately.
