Ingredients
  

For the Salad
  • 1 bag Coleslaw Mix can substitute with shredded cabbage
  • 1 can Black Beans rinsed and drained
  • 1 can Corn can use frozen corn
  • 1 Jalapeño Pepper adjust for spice level
  • 1 Red Bell Pepper can substitute with yellow or orange
  • 3 Green Onions sliced
  • 1/4 cup Cilantro can substitute with parsley
For the Dressing
  • 1/2 cup Sour Cream can use Greek yogurt
  • 1/2 cup Mayonnaise consider light mayo
  • 1/4 cup Lime Juice fresh juice from about 2 limes
  • 1 tbsp Chipotle Sauce from adobo
For the Topping
  • 2 cups Chili Cheese Fritos reserve a handful for topping
For Extra Flavor
  • 1 tbsp Taco Seasoning pre-made mixes work well
  • 1 tsp Ground Cumin

Method
 

Preparation
  1. In a large mixing bowl, combine the coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, and cilantro. Toss until evenly distributed.
  2. In another bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and gently fold until all ingredients are coated.
  4. Fold in all but a handful of the Chili Cheese Fritos.
  5. Top with reserved Fritos and serve immediately.

Notes
