Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8"x8" baking pan with parchment paper.
  2. Combine unsalted butter and chopped semi-sweet chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring until smooth.
  3. Mix in granulated sugar and light brown sugar with the melted chocolate. Add vanilla extract and eggs until smooth.
  4. Fold in flour, cocoa powder, espresso powder, and salt until no dry flour remains. Do not overmix.
  5. Spread the batter in the prepared pan and bake for 30-35 minutes until a toothpick inserted comes out with moist crumbs.
  6. Cool the brownies completely on a wire rack.
  7. Chop additional semi-sweet chocolate and place in a bowl. Heat heavy cream until it simmers, pour over chocolate and let sit for 2 minutes.
  8. Stir until smooth, then let cool slightly and whip until light and fluffy.
  9. Cut out brownie circles and dollop the whipped chocolate ganache on top before serving.
