- Preheat your oven to 350°F (175°C) and line an 8"x8" baking pan with parchment paper.
- Combine unsalted butter and chopped semi-sweet chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring until smooth.
- Mix in granulated sugar and light brown sugar with the melted chocolate. Add vanilla extract and eggs until smooth.
- Fold in flour, cocoa powder, espresso powder, and salt until no dry flour remains. Do not overmix.
- Spread the batter in the prepared pan and bake for 30-35 minutes until a toothpick inserted comes out with moist crumbs.
- Cool the brownies completely on a wire rack.
- Chop additional semi-sweet chocolate and place in a bowl. Heat heavy cream until it simmers, pour over chocolate and let sit for 2 minutes.
- Stir until smooth, then let cool slightly and whip until light and fluffy.
- Cut out brownie circles and dollop the whipped chocolate ganache on top before serving.
