- Preheat your oven to 160°C (320°F) for a fan oven or 170°C (338°F) for a conventional oven. Line a baking tray with parchment paper.
- In a heatproof bowl over simmering water, combine the chopped dark chocolate and butter. Stir until melted and smooth, then stir in vanilla extract.
- In a medium bowl, whisk together caster sugar, demerara sugar, and room temperature eggs until light and fluffy, about 5 minutes.
- In a separate bowl, sift together plain flour, cocoa powder, baking powder, and salt. Fold in the chocolate chips.
- Fold the melted chocolate mixture into the whipped eggs and sugar. Then gently fold in the dry ingredients until just combined.
