Step-by-Step Instructions for Fudgy Chewy Brookies
  1. Preheat your oven to 160°C (320°F) for a fan oven or 170°C (338°F) for a conventional oven. Line a baking tray with parchment paper.
  2. In a heatproof bowl over simmering water, combine the chopped dark chocolate and butter. Stir until melted and smooth, then stir in vanilla extract.
  3. In a medium bowl, whisk together caster sugar, demerara sugar, and room temperature eggs until light and fluffy, about 5 minutes.
  4. In a separate bowl, sift together plain flour, cocoa powder, baking powder, and salt. Fold in the chocolate chips.
  5. Fold the melted chocolate mixture into the whipped eggs and sugar. Then gently fold in the dry ingredients until just combined.
  6. Dollop tablespoons of dough onto the lined baking tray, leaving space for spreading. Bake for 12-14 minutes until set with a crackled top and soft in the center.
  7. Allow to cool on the tray for about 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
