- Preheat a large skillet over medium heat. Add 1 tablespoon of butter and a splash of olive oil.
- Add diced baby potatoes and season with salt, pepper, rosemary, and thyme. Cook for 10-12 minutes until fork-tender.
- Remove the potatoes and set them aside to keep warm.
- In the same skillet, add the remaining tablespoon of butter. Once bubbling, add steak bites in a single layer and sear for 2-3 minutes on each side.
- Remove steak bites and lower the heat. Add remaining butter and minced garlic, stirring for about 1 minute until fragrant.
- Return steak bites and warm potatoes to the skillet, tossing to coat in the garlic butter sauce. Garnish with fresh parsley before serving.
