Step-by-Step Instructions for Garlic Shrimp Mofongo
  1. Peel the plantains and cut into 1–2 inch pieces. Boil in salted water for 10–15 minutes until tender. Optionally fry until golden brown.
  2. In a mortar and pestle, mash the cooked plantains with minced garlic and olive oil until combined but chunky. Mix in chicharrón if using. Season with salt and pepper.
  3. In a skillet, heat butter or olive oil, sauté minced garlic for 1–2 minutes until fragrant. Add shrimp and season. Cook for 3–4 minutes per side until pink and opaque.
  4. Mold the mashed plantains into a mound on a plate and top with garlic shrimp, allowing pan juices to drizzle down.
  5. Garnish with cilantro or lime and serve immediately while warm. Pair with vegetables or rice and beans.
