- Cook the frozen udon noodles according to the package instructions, usually boiling for 3-5 minutes. Reserve ½ cup of noodle water before draining noodles.
- In a large pan, melt 2 tablespoons of butter over medium heat, add 2 cloves of minced garlic and 1 chopped shallot, sauté until fragrant and translucent.
- Stir in 3 tablespoons of gochujang into the pan and cook for about 30 seconds, scraping the bottom for flavor.
- Gradually pour in 1 cup of heavy cream and reserved noodle water, add 2 tablespoons of soy sauce and 1 teaspoon of gochugaru, simmer until thickened.
- Introduce the cooked udon noodles to the sauce, gently toss until evenly coated.
- Dish out into bowls, add grated Parmesan, chopped green onions, and egg yolk if desired.
