  • 0.5 cup Reserved Noodle Water Save when draining noodles.
  • 2 tablespoons Soy Sauce Use low-sodium varieties for better health.
  • 1 teaspoon Gochugaru Red pepper flakes are an alternative.
For Toppings
  • 0.25 cup Grated Parmesan Cheese Optional garnish.
  • 0.25 cup Chopped Green Onions Fresh garnish for crunch.
  • 1 large Egg Yolk Optional for extra creaminess.

Method
 

Step-by-Step Instructions
  1. Cook the frozen udon noodles according to the package instructions, usually boiling for 3-5 minutes. Reserve ½ cup of noodle water before draining noodles.
  2. In a large pan, melt 2 tablespoons of butter over medium heat, add 2 cloves of minced garlic and 1 chopped shallot, sauté until fragrant and translucent.
  3. Stir in 3 tablespoons of gochujang into the pan and cook for about 30 seconds, scraping the bottom for flavor.
  4. Gradually pour in 1 cup of heavy cream and reserved noodle water, add 2 tablespoons of soy sauce and 1 teaspoon of gochugaru, simmer until thickened.
  5. Introduce the cooked udon noodles to the sauce, gently toss until evenly coated.
  6. Dish out into bowls, add grated Parmesan, chopped green onions, and egg yolk if desired.
