  • 1/4 cup Low-Sodium Soy Sauce use tamari for gluten-free
  • 2 tablespoons Chili Garlic Sauce adjust to taste
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • 2 tablespoons Lemon Juice or Apple Cider Vinegar
  • 1 teaspoon Kosher Salt to taste
  • 1/2 teaspoon Freshly Ground Black Pepper to taste
For the Chicken
  • 4 pieces Boneless Skinless Chicken Breasts or chicken thighs
  • 1/4 cup Fresh Cilantro optional, for garnish
  • 1 cup Peppers optional, for garnish

Method
 

Marinade Preparation
  1. Whisk together peach preserves, low-sodium soy sauce, chili garlic sauce, olive oil, lemon juice, kosher salt, and freshly ground black pepper until well combined.
Chicken Marination
  1. Place chicken breasts into a zip-top bag and pour marinade over chicken. Seal and refrigerate for at least 1 hour.
Grilling Setup
  1. Preheat grill to medium-high heat (375°F to 400°F). Clean and oil the grates.
Grilling Chicken
  1. Remove chicken from marinade and grill for about 10 minutes, flipping occasionally until internal temperature reaches 165°F.
Finishing Touch
  1. Brush the chicken with reserved marinade while grilling for extra flavor.
Serve
  1. Remove chicken from grill and let it rest for a few minutes. Garnish with fresh cilantro and sliced peppers.
