Ingredients
  

For the Marinade
  • 1/2 cup Honey
  • 1/4 cup Whole Grain Mustard
  • 1/4 cup Extra Virgin Olive Oil or regular olive oil
  • 2 tablepoons Fresh Lemon Juice juice from about 2 lemons
  • 1/4 cup Fresh Cilantro chopped, optional
  • 1 clove Garlic grated
  • 1 teaspoon Yellow Curry Powder or regular curry powder
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Crushed Red Pepper Flakes optional
For the Chicken
  • 2.5 lbs Boneless, Skinless Chicken Thighs or chicken breasts/tofu
For the Salad
  • 6 pieces Persian Cucumbers smashed and cut
  • 2 pieces Fresh Peaches sliced
  • 1/4 cup Fresh Mint chopped, optional

Method
 

Marinate the Chicken
  1. Whisk together all marinade ingredients in a bowl. Reserve 1/4 cup marinade. Coat chicken with remaining marinade and refrigerate for 30 minutes to 4 hours.
Prepare the Grill
  1. Preheat your grill to medium-low heat (350°F to 400°F). Clean and oil grill grates.
Grill the Chicken
  1. Remove chicken from marinade and grill for about 4 minutes per side, brushing with reserved marinade after flipping until internal temperature reaches 165°F.
Make the Salad
  1. Toss cucumbers, peaches, cilantro, and mint in a bowl. Drizzle with lemon juice and reserved marinade. Marinate at room temperature for 10 minutes.
Serve the Dish
  1. Arrange grilled chicken on a platter, top with peach salad, garnish with herbs, and serve.
