- Preheat your grill to medium-high heat, about 400°F (200°C). Rinse the shrimp under cold water and pat dry. Season with salt, pepper, and any spices. Grill for about 2-3 minutes per side until opaque.
- While the shrimp are grilling, rinse and chop the romaine lettuce. Measure out the Caesar dressing and grate the Parmesan cheese. Gather tortillas.
- Lay a tortilla flat and layer with a generous handful of romaine lettuce, grilled shrimp, Caesar dressing, and Parmesan cheese. Add bacon bits or croutons if desired.
- Fold in the sides of the tortilla and roll tightly from the bottom upwards. Cut in half for easier handling and serve immediately with extra dressing on the side.
