- Preheat your oven to 400°F (200°C) for roasting the sweet potatoes.
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet.

- Add the lean ground beef to the skillet with onions, sprinkle in taco seasoning and cook until browned, about 8 to 10 minutes.
- Assemble the bowls with roasted sweet potatoes as a base, followed by the ground beef mixture, avocado slices, and cottage cheese.
- Drizzle with hot honey to finish.
