Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes.
  3. Add the ground turkey to the skillet and cook for 5-6 minutes until browned and no longer pink.
  4. Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Simmer for 3-4 minutes.
  5. Layer half of the zucchini slices in the greased baking dish, followed by half of the turkey mixture and half of the shredded mozzarella cheese. Repeat the layers.
  6. Bake uncovered for 30-35 minutes, until the cheese is golden and bubbly.
  7. Allow to cool for 5 minutes before serving.
