Ingredients
  

For the Soup Base
  • 2 tablespoons Butter unsalted
  • 1 tablespoon Olive Oil
  • 1 medium Onion diced
  • 2 stalks Celery chopped
  • 2 medium Carrots sliced
  • 2 cloves Garlic minced
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Flour or gluten-free flour
For the Broth
  • 4 cups Seafood or Chicken Broth or vegetable broth
  • 1 tablespoon Old Bay Seasoning
  • 1 teaspoon Paprika or smoked paprika
  • 1 leaf Bay Leaf
For the Finishing Touches
  • to taste Salt
  • to taste Pepper
  • 1 cup Heavy Cream or half-and-half
  • 1 pound Shrimp fresh, peeled and deveined
  • 1 cup Crab Meat lump crab preferred
  • for garnish Fresh Parsley/Chives
  • for serving Lemon Wedges

Method
 

Step-by-Step Instructions
  1. Start by peeling and deveining the shrimp, rinsing them under cold water and setting aside. Pick through the crab meat to remove any shells.
  2. In a large pot over medium heat, add the butter and olive oil. Once melted, add onion, celery, and carrots; cook for 5-7 minutes until soft.
  3. Introduce the minced garlic; sauté for about 1 minute before stirring in the tomato paste and cooking for an additional 1-2 minutes.
  4. Sprinkle flour over the vegetables, stir well and cook for another 1-2 minutes.
  5. Gradually pour in the broth while stirring. Add Old Bay seasoning, paprika, bay leaf, and adjust with salt and pepper. Simmer for 10 minutes.
  6. Optional: use an immersion blender to partially blend for a smoother texture, while leaving some vegetable chunks.
  7. Reduce heat to low, stir in heavy cream, and add shrimp and crab meat. Simmer gently for an additional 5-7 minutes until shrimp are opaque.
  8. Taste and adjust seasoning as needed. Remove the bay leaf before serving.
  9. Ladle into warm bowls, garnish with parsley or chives and serve with lemon wedges.
