Prepare the Tart
- Preheat your oven to 375°F (190°C). In a food processor, combine flour, cold butter, and sugar, pulsing until it resembles coarse crumbs. Gradually add cold water until it clumps together. Flatten into a disc, wrap in plastic wrap, and chill for 30 minutes.
- Roll out the dough into a circle about 1/8 inch thick. Place in tart pan, press into edges, and prick the bottom. Bake for 15-20 minutes until golden. Allow to cool.
- In a mixing bowl, beat cream cheese and sugar until smooth. Spread evenly over the cooled tart crust. Bake for an additional 12-15 minutes until just set and cool again.
- Arrange fresh strawberries atop the filling. Simmer jam with a splash of water until thin, cool slightly, then brush over strawberries.
- Refrigerate for at least an hour before serving. Slice and enjoy!
