Ingredients
  

For the Crust
  • 1 cup all-purpose flour Use for best structure
  • 1/2 cup cold unsalted butter Keep cold for flakiness
  • 2 tablespoons sugar Sweetness in the crust
  • 3-4 tablespoons cold water Add gradually
For the Filling
  • 8 oz cream cheese Room temperature
  • 1/3 cup sugar Adjust to taste
For the Glaze
  • 1/4 cup jam Apricot or strawberry, thin with water
For the Topping
  • 2 cups fresh strawberries Ripe and vibrant

Method
 

Prepare the Tart
  1. Preheat your oven to 375°F (190°C). In a food processor, combine flour, cold butter, and sugar, pulsing until it resembles coarse crumbs. Gradually add cold water until it clumps together. Flatten into a disc, wrap in plastic wrap, and chill for 30 minutes.
  2. Roll out the dough into a circle about 1/8 inch thick. Place in tart pan, press into edges, and prick the bottom. Bake for 15-20 minutes until golden. Allow to cool.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Spread evenly over the cooled tart crust. Bake for an additional 12-15 minutes until just set and cool again.
  4. Arrange fresh strawberries atop the filling. Simmer jam with a splash of water until thin, cool slightly, then brush over strawberries.
  5. Refrigerate for at least an hour before serving. Slice and enjoy!
