Step-by-Step Instructions for Pineapple Cowboy Candy
  1. Prepare your ingredients by dicing the fresh pineapple into bite-sized chunks and slicing the jalapeños thinly, removing the seeds and membranes for a milder flavor.
  2. Combine the diced pineapple, sliced jalapeños, granulated sugar, apple cider vinegar, ginger, and lemon juice in a large pot. Stir gently and bring to a gentle boil, allowing the flavors to meld together for about 5-7 minutes.
  3. Reduce the heat to medium-low and let the mixture simmer, stirring occasionally, for around 20-30 minutes until it thickens and becomes sticky.
