  • 1/4 cup Honey local honey recommended
  • 3 cloves Garlic minced
  • 1/4 cup Soy Sauce low-sodium preferred
  • 2 each Bell Peppers (Red & Yellow) sliced
  • 1 cup Baby Carrots whole
  • 1 lb Baby Potatoes halved
  • 2 tbsp Olive Oil
For Garnish
  • 2 tbsp Fresh Parsley chopped
  • 2 tbsp Green Onions chopped

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced kielbasa, bell peppers, baby carrots, and baby potatoes. Drizzle with olive oil, honey, and soy sauce, and add the minced garlic. Toss well to coat all ingredients evenly.
  3. Line a baking sheet with parchment paper and spread the mixture evenly onto the sheet in a single layer.
  4. Roast in the oven for 20-25 minutes, stirring halfway through. It's ready when the kielbasa is golden and the vegetables are tender.
  5. Remove from the oven, let cool for a minute, and garnish with freshly chopped parsley or green onions before serving hot.
