Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.
  2. Grate fresh zucchini and squeeze out excess moisture with a kitchen towel. Set aside.
  3. In a large bowl, whisk together all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, beat together eggs, oil, granulated sugar, brown sugar, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined.
  6. Fold in grated zucchini, chocolate chips, and nuts if using.
  7. Pour batter into prepared pan and smooth the top. Bake for 50–60 minutes until a toothpick comes out clean.
  8. Let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
