- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.
- Grate fresh zucchini and squeeze out excess moisture with a kitchen towel. Set aside.
- In a large bowl, whisk together all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- In another bowl, beat together eggs, oil, granulated sugar, brown sugar, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined.
- Fold in grated zucchini, chocolate chips, and nuts if using.
- Pour batter into prepared pan and smooth the top. Bake for 50–60 minutes until a toothpick comes out clean.
