- In a medium bowl, combine the ricotta cheese with salt, black pepper, and any optional seasonings. Mix until smooth.
- Spread a layer of the ricotta mixture on one side of each bread slice. Layer fresh spinach, sun-dried tomatoes, and mozzarella on one slice. Top with the second slice, ricotta side down.
- Heat a skillet over medium heat. Melt butter or drizzle olive oil. Grill the sandwich for about 5 minutes until golden brown, then flip.
- Cook for another 5 minutes until both sides are golden and cheese is melted. Press with a spatula for additional crust.
- Remove from heat, allow to cool for a minute, slice, and serve immediately.
