Step-by-Step Instructions for Irish Stew Meatballs
- In a large bowl, combine ground lamb or beef with breadcrumbs, an egg, and a pinch of salt and pepper. Mix gently and form golf-ball-sized meatballs, about 1.5 inches in diameter.
- Heat a large skillet over medium heat and add a splash of oil. Add meatballs in batches and brown each for 4-5 minutes on each side.
- In the same skillet, add chopped onions and sliced carrots, sautéing for 5-7 minutes until the onions are translucent.
- Return the browned meatballs to the skillet, pour in the broth and add fresh herbs. Stir gently.
- Cover the skillet and reduce heat to low, allowing the stew to simmer gently for 30-40 minutes.
- Once cooked, ladle stew into bowls and garnish with freshly chopped parsley. Serve hot.
