Ingredients
  

For the Pudding
  • 1/2 cup Chia Seeds
  • 1/2 cup Miso Paste Yellow or white miso works well.
  • 1/2 cup Medjool Dates Can substitute with dried apricots.
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cardamom
  • 2 cups Soy Milk Feel free to use any plant-based milk.
  • 1/2 cup Soy Yogurt Any preferred yogurt can be used.
For the Crumble
  • 1 cup Oats Gluten-free oats for gluten-free option.
  • 1/2 cup Walnuts Can substitute with pecans or almonds.
For the Topping
  • 2 cups Apples Fresh bananas can be a delicious alternate.
  • 1/2 cup Apple Butter Can substitute with sautéed apples.

Method
 

Preparation Steps
  1. In a blender, combine soy yogurt, apple butter, Medjool dates, miso paste, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend on high for about 1-2 minutes until smooth and creamy.
  2. Pour the blended mixture over chia seeds in a bowl. Whisk well for about one minute and allow to sit for 5 minutes, then whisk again. Refrigerate the chia pudding for at least one hour.
  3. In a food processor, pulse the oats, walnuts, and a pinch of salt until the mixture resembles coarse crumbs. Transfer the crumble to a bowl and set aside.
  4. Heat a skillet over medium heat and add diced apples, maple syrup, an extra sprinkle of cinnamon, a pinch of salt, and water. Sauté for 3-4 minutes until softened.
  5. In serving jars, layer the chia pudding, followed by warm stewed apples, and finish with a sprinkle of the crumble on top.
