Ingredients

  • 14 lbs Brisket choose a whole packer or flat/point cut
  • BBQ Rub apply generously
  • Hardwood Chunks select your preferred type
For the Elote Topping
  • 5 ears Corn or frozen corn if fresh isn't available
  • 1/3 cup Mayonnaise recommended: Hellmann's
  • 3/4 cup Cotija Cheese crumbled, feta can be used as a substitute
  • 1.5 tsp Chili Powder adjust to suit your spice tolerance
  • 2 wedges Limes for serving
  • 1.5 tbsp Cilantro fresh is ideal
  • 1 pinch Cayenne Pepper optional
For the Vegetables
  • 1 Green Bell Pepper finely diced
  • 1/4 small Red Onion finely diced
For the Tacos
  • 16 Tortillas La Banderita is recommended
  • 2 cups Cheddar Cheese for topping
  • Avocado Lime Crème or sour cream

Method
 

Step-by-Step Instructions
  1. Pat the brisket dry and apply BBQ rub. Preheat smoker to 225°F and place brisket fat-side up.
  2. Cook brisket for 10-14 hours, aiming for an internal temperature of 195°F-205°F.
  3. Remove brisket from smoker, wrap in foil, and allow it to rest for 30-60 minutes.
  4. Grill corn and diced bell pepper for 8-10 minutes until charred and tender.
  5. Combine grilled corn and bell pepper with mayonnaise, cotija cheese, chili powder, and lime juice. Season to taste.
  6. Warm tortillas on a skillet for 30 seconds on each side until pliable.
  7. Assemble tacos with cheddar cheese, brisket, elote mixture, avocado lime crème, and garnish with cilantro.
