Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together the chipotle peppers, honey, lime juice, and spices until thick and sticky.
  2. Place the chicken thighs in a large zip-top bag and pour the marinade over, coating well. Marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 375°F. Heat oil in a skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden, then flip and bake for 20-25 minutes.
  4. Peel and chop the potatoes, boil in salted water until fork-tender (15-20 minutes). Drain.
  5. Mash the potatoes with smoked Gouda, butter, and milk until creamy and smooth.
  6. Serve the chicken with a generous portion of Gouda mashed potatoes and optionally garnish with fresh herbs.
