Step‑by‑Step Instructions
  1. Prep Dry Ingredients: In a large mixing bowl, whisk together flour, cocoa powder, baking powder, and sea salt until well combined.
  2. Cream Wet Ingredients: Beat butter, light brown sugar, and granulated sugar until light and fluffy. Mix in egg yolks and vanilla extract.
  3. Combine Ingredients: Gradually add dry mixture to wet ingredients, mixing on low speed until combined.
  4. Chill Dough: Scoop the dough into balls, make an indent in each, place on lined baking sheets, cover and refrigerate for 1 hour.
  5. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets.
  6. Bake Cookies: Remove cookie dough from the refrigerator and bake for 9-11 minutes until soft in the center.
  7. Make Ganache: Heat heavy cream until boiling, pour over chopped dark chocolate, stir until smooth, then mix in cherry preserves.
  8. Assemble Cookies: Fill each cooled cookie indent with ganache and chill in the refrigerator to set.
