  • 4 cups All-Purpose Flour
  • 1 teaspoon Salt use sea salt for best flavor
  • 2 teaspoons Instant Yeast
  • 1/4 cup Brown Sugar or granulated sugar if needed
  • 1 cup Warm Water 90°F-100°F
  • 1/4 cup Olive Oil can substitute with melted butter
  • 1/2 cup Cinnamon Sweet Bits
Topping Ingredients
  • 1/2 cup Brown Sugar light or dark depending on taste
  • 1/4 cup Butter softened
Glaze Ingredients
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk adjust for desired consistency
  • 1 teaspoon Vanilla Extract

Method
 

Instructions
  1. In a large mixing bowl, whisk together the all-purpose flour, salt, instant yeast, and brown sugar until well combined. Gradually add in the warm water and olive oil, mixing until no dry patches remain. Cover the bowl with a damp cloth and let it rest for 15 minutes.
  2. Perform the first fold by gently stretching one side of the dough and folding it over the center. Rotate the bowl and repeat until you've completed four folds, resting the dough for 15 minutes between each fold. After the third fold, incorporate half of the Cinnamon Sweet Bits.
  3. Transfer the dough to a lightly floured surface and shape it into a ball. Place it back in the bowl, cover it, and let it rise in a warm area until it doubles in size, about 1 hour.
  4. Grease a 9-inch square focaccia pan with nonstick spray, line it with parchment paper, and drizzle olive oil over the parchment.
  5. Gently turn the risen dough out onto the prepared pan, creating deep dimples all over the surface. Spread the brown sugar topping paste over the focaccia.
  6. Cover the pan and allow the dough to undergo a final rise for about 1 to 1.5 hours until it has visibly puffed up.
  7. Preheat the oven to 450°F. Once preheated, bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth. Drizzle over the warm focaccia after it comes out of the oven.

Notes
