Method
 

Step-by-Step Instructions
  1. Melt 1 cup of dark chocolate chips with ¼ cup of heavy cream in a heatproof bowl over simmering water for 5 minutes until smooth. Let cool for 10 minutes.
  2. Combine 2 ¾ cups of sweetened shredded coconut, ½ cup of sweetened condensed milk, 1 teaspoon of pure vanilla extract, and a pinch of salt in a mixing bowl. Mix until fully blended.
  3. With damp hands, take a tablespoon-sized amount of coconut mixture, flatten, and add a teaspoon of cooled chocolate filling. Fold edges around chocolate and roll into a ball.
  4. Place balls on a lined baking sheet, cover loosely, and refrigerate for 30 minutes.
  5. Melt an additional 1 cup of dark chocolate chips with 1 tablespoon of coconut oil in a microwave-safe bowl. Drizzle over chilled coconut balls.
  6. Let the drizzle set for about 15 minutes at room temperature or refrigerate to expedite. Serve or store in an airtight container.
