  • 8 oz chocolate for coating; can omit for plain truffles
  • 1 tbsp neutral oil optional for smoother coating

Method
 

Step-by-Step Instructions
  1. Prepare your ingredients by ensuring the cream cheese and butter are at room temperature.
  2. Mix the cream cheese, butter, powdered sugar, and instant coffee in a bowl until smooth.
  3. Chill the mixture in the freezer for 15-20 minutes to firm it up.
  4. Shape the truffles into balls of about one inch in diameter and place on parchment lined plate.
  5. Freeze the truffles for about 30 minutes until firm.
  6. Melt the coating chocolate in a microwave, stirring until smooth, and add neutral oil if desired.
  7. Dip the truffles into the melted chocolate and allow excess to drip off before placing back on the plate.
  8. Return the coated truffles to the refrigerator for at least 30 minutes to set the chocolate.
