Ingredients
  

For the Pasta
  • 8 ounces pasta any type, including gluten-free
For the Chicken
  • 1 pound chicken breast can swap with plant-based chicken
For the Sauce
  • 3 tablespoons butter or vegan butter alternative
  • 1 cup heavy cream or coconut/cashew cream
  • 1 cup chicken broth or vegetable broth for vegetarian
For the Aromatics
  • 3 cloves garlic minced
  • 1 medium onion diced
For the Flavoring
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes to taste
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Garnish
  • 1/2 cup Parmesan cheese or nutritional yeast for vegan
  • 2 tablespoons fresh parsley chopped

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Season chicken with salt and pepper, cook for 6-8 minutes until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add 1 tablespoon of butter, garlic, and onion. Sauté for 3-4 minutes until the onion is translucent.
  4. Pour in heavy cream and chicken broth, stirring to combine. Add Italian seasoning and red pepper flakes. Let it simmer for 5 minutes, adjusting with reserved pasta water as needed.
  5. Return chicken and drained pasta to the skillet, toss everything gently until well coated. Simmer for another 2 minutes.
  6. Plate the pasta and garnish with Parmesan cheese and fresh parsley.
