For the Ricotta Layer
  • 15 oz Ricotta Cheese Part-skim or mascarpone can replace half if desired.

  • 1 teaspoon Vanilla Extract Almond or orange extract can be alternatives.
For the Frosting
  • 1 box Instant Pudding Mix Try dark chocolate pudding mix for a richer flavor.
  • 2 cups Milk Whole milk works best for the frosting.

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the chocolate cake mix, water, 3 eggs, and vegetable oil. Blend on low speed until combined.
  3. In another bowl, beat together the ricotta cheese, 4 eggs, sugar, and vanilla extract until smooth.
  4. Pour the chocolate cake batter into the greased pan and gently spoon the ricotta mixture over it.
  5. Bake in the preheated oven for 60-70 minutes until the center is set.
  6. Remove from oven and cool in the pan for about 2 hours. Cover and refrigerate for at least 4 hours.
  7. Whisk together the pudding mix and milk until combined, then fold in the whipped topping.
  8. Spread the frosting over the chilled cake and refrigerate for another 30 minutes before serving.
