  • 4 medium potatoes peeled and cut into cubes
  • 2 tablespoons olive oil for tossing
  • 1 teaspoon salt to taste
For the Spicy Sauce
  • 1 cup tomato sauce
  • 1 teaspoon paprika smoked or regular
  • 1 teaspoon garlic powder
  • 0.5 teaspoon chili powder adjust to taste
  • 1 tablespoon vinegar for tanginess

Method
 

Preparation Instructions
  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the potato cubes with olive oil and salt.
  3. Spread the potatoes on the prepared baking sheet and roast for about 30 minutes, or until golden and crispy.
  4. Meanwhile, in a small saucepan, combine the tomato sauce, paprika, garlic powder, chili powder, and vinegar. Heat until warmed through.
  5. Once the potatoes are done, drizzle them with the spicy sauce and serve immediately.
  6. Enjoy with a sprinkle of fresh herbs if desired!
