Method
 

Cooking Steps
  1. Start by washing the stew beef under cold running water, then cut it into small, bite-sized pieces to ensure even cooking.
  2. In a medium pan, heat ¼ cup of olive oil over medium heat until shimmering. Add the seasoned beef, sautéing for about 8-10 minutes until browned.
  3. Chop one onion and one red bell pepper into small pieces, then add to the pan with the beef. Sauté for another 3 minutes.
  4. Stir in 2 tablespoons of tomato paste and let it cook for about 5 minutes, stirring occasionally.
  5. Pour in 1 cup of water and 2 cups of stock, stirring to combine with 1 tablespoon of beef bouillon and cayenne pepper.
  6. Stir in the ½ cup of peanut butter until fully dissolved into the stew, cooking for an additional 2-5 minutes.
  7. Ladle the stew into bowls and serve hot with cauliflower rice or traditional white rice.
