  • 300 grams Fresh Strawberries hulled and chopped

  • 100 grams Rolled Oats or quick oats
  • 100 grams Light Brown Sugar or regular sugar
  • 200 grams Extra Fresh Strawberries for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare a 9-inch springform pan by greasing it and lining the base with parchment paper.
  2. Crush the digestive biscuits into fine crumbs and mix with melted butter. Press into the bottom of the pan and refrigerate.
  3. Beat cream cheese and caster sugar until smooth. Add eggs one at a time, mixing on low speed, then stir in vanilla and strawberries.
  4. Pour the cream cheese filling over the chilled crust and smooth the top.
  5. Combine flour and oats in a bowl, cut in butter until crumbly, then stir in brown sugar. Sprinkle over the cheesecake filling.
  6. Bake for 45-50 minutes until edges are firm and center has a slight wobble. Remove and cool for an hour.
  7. Chill in the refrigerator for at least 4 hours or overnight. Decorate with extra strawberries before serving.
