- Preheat your oven to 180°C (350°F) and prepare a 9-inch springform pan by greasing it and lining the base with parchment paper.
- Crush the digestive biscuits into fine crumbs and mix with melted butter. Press into the bottom of the pan and refrigerate.
- Beat cream cheese and caster sugar until smooth. Add eggs one at a time, mixing on low speed, then stir in vanilla and strawberries.
- Pour the cream cheese filling over the chilled crust and smooth the top.
- Combine flour and oats in a bowl, cut in butter until crumbly, then stir in brown sugar. Sprinkle over the cheesecake filling.
- Bake for 45-50 minutes until edges are firm and center has a slight wobble. Remove and cool for an hour.
- Chill in the refrigerator for at least 4 hours or overnight. Decorate with extra strawberries before serving.
