- Season chicken breasts with salt and pepper on both sides and let sit for about 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook for 6–7 minutes on each side until golden brown and cooked through.
- Remove chicken from heat and let it rest for at least 5 minutes before slicing.
- While the chicken rests, slice your avocado, cheese, red onion, and tomato.
- Spread mayonnaise and Dijon mustard on one side of each bread slice. Layer chicken, avocado, cheese, onions, and tomato on the other side of one slice.
- Top with the second slice of bread, mayonnaise side down, and grill on medium heat for 3–4 minutes per side.
- Remove from skillet, slice in half, and serve warm.
