- Preheat a medium skillet over medium heat for about 2-3 minutes. Spread mayonnaise on one side of each slice of bread.
- Melt 1 teaspoon of unsalted butter in the skillet, then place one slice of bread with the mayonnaise side facing down.
- Layer the aged cheddar and Gruyère cheese on top of the bread in the skillet, then place the other slice on top, mayonnaise side up.
- Cook for 3-4 minutes until the bottom is golden brown and crispy, watching closely to avoid burning.
- Flip the sandwich over, adding the remaining teaspoon of butter to the skillet and allowing it to melt.
- Press down gently on the sandwich and cook the other side for another 3-4 minutes until golden brown.
- Remove from skillet and let rest for about 2 minutes before slicing diagonally to serve.
