For the Spread

For the Cheese
  • 1 cup Aged Cheddar Cheese Freshly grated for best melt.
  • 1 cup Gruyère Cheese Melts beautifully; can substitute.

Method
 

Step-by-Step Instructions
  1. Preheat a medium skillet over medium heat for about 2-3 minutes. Spread mayonnaise on one side of each slice of bread.
  2. Melt 1 teaspoon of unsalted butter in the skillet, then place one slice of bread with the mayonnaise side facing down.
  3. Layer the aged cheddar and Gruyère cheese on top of the bread in the skillet, then place the other slice on top, mayonnaise side up.
  4. Cook for 3-4 minutes until the bottom is golden brown and crispy, watching closely to avoid burning.
  5. Flip the sandwich over, adding the remaining teaspoon of butter to the skillet and allowing it to melt.
  6. Press down gently on the sandwich and cook the other side for another 3-4 minutes until golden brown.
  7. Remove from skillet and let rest for about 2 minutes before slicing diagonally to serve.
