Ingredients
  

For the Meatballs
  • 1 lb Ground Meat beef, pork, turkey, or chicken
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/2 cup Breadcrumbs or gluten-free breadcrumbs
  • 1 Egg or flax egg for vegan
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive Oil or coconut oil
For the Coconut Curry Sauce
  • 1 tbsp Garlic minced
  • 1 tbsp Ginger freshly grated
  • 3 tbsp Red Curry Paste adjust for heat
  • 1 can Coconut Milk full-fat
  • 2 tbsp Soy Sauce or tamari for gluten-free
  • 1 tbsp Lime Juice freshly squeezed
  • 1/4 cup Fresh Cilantro for garnish

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground meat, finely chopped onion, minced garlic, breadcrumbs, egg, salt, and pepper. Mix gently until combined.
  2. Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  3. Heat olive oil in a skillet over medium heat. Brown the meatballs in a single layer for 6-8 minutes, turning occasionally.
Coconut Curry Sauce
  1. In the same skillet, reduce heat slightly and add minced garlic and ginger. Sauté for 1 minute.
  2. Whisk in red curry paste and coconut milk until smooth. Let it simmer for 3-4 minutes.
  3. Return browned meatballs to the skillet, ensure they are coated in the sauce, and simmer for 10-15 minutes.
Serving
  1. Remove the skillet from heat and drizzle with lime juice.
  2. Transfer to a platter and garnish with cilantro. Serve over jasmine rice or with crusty bread.
