Preparation Steps
- In a medium saucepan, combine heavy cream and whole milk and heat until 165°F.
- In a separate bowl, whisk egg yolks with granulated sugar until thick and pale.
- Slowly pour hot cream mixture into the egg yolks while whisking continuously.
- Return mixture to saucepan and cook over low heat until it thickens to 165°F.
- Strain the custard through a fine-mesh strainer into a bowl set over ice, then refrigerate.
- Stir in vanilla extract, peppermint extract, salt, and food coloring, if desired.
- Pour cooled custard into the ice cream maker and churn according to manufacturer’s instructions.
- Add crushed Oreo cookies in the last 30 seconds of churning.
- Transfer ice cream to an airtight container and freeze for about 2 hours.
