  • 1 teaspoon peppermint extract Use to taste
  • ¼ teaspoon salt Balances sweetness

Method
 

Preparation Steps
  1. In a medium saucepan, combine heavy cream and whole milk and heat until 165°F.
  2. In a separate bowl, whisk egg yolks with granulated sugar until thick and pale.
  3. Slowly pour hot cream mixture into the egg yolks while whisking continuously.
  4. Return mixture to saucepan and cook over low heat until it thickens to 165°F.
  5. Strain the custard through a fine-mesh strainer into a bowl set over ice, then refrigerate.
  6. Stir in vanilla extract, peppermint extract, salt, and food coloring, if desired.
  7. Pour cooled custard into the ice cream maker and churn according to manufacturer’s instructions.
  8. Add crushed Oreo cookies in the last 30 seconds of churning.
  9. Transfer ice cream to an airtight container and freeze for about 2 hours.
