  • 1 tablespoon Ginger minced
  • 1 cup Cashews Star ingredient for crunch.
  • 2 scallions Green Onions sliced
For the Sauce
  • 1 cup Chicken Stock Low-sodium preferred.
  • 1/4 cup Soy Sauce Swap with tamari for gluten-free.
  • 2 tablespoons Honey Substitute with maple syrup if desired.
  • 2 tablespoons Hoisin Sauce
  • 1 tablespoon Rice Wine Vinegar Apple cider vinegar can substitute.

Method
 

Step-by-Step Instructions
  1. Prepare the Sauce: In a medium bowl, combine the chicken stock, soy sauce, honey, hoisin sauce, cornstarch, and rice wine vinegar. Whisk until the cornstarch is dissolved. Set aside.
  2. Coat the Chicken: Cut chicken into bite-sized pieces. Place in a bowl, add cornstarch, and toss to evenly coat.
  3. Fry the Chicken: Heat oil in a pan to 350°F (175°C). Fry chicken in batches for 2-3 minutes until golden brown. Remove and drain on paper towels.
  4. Stir-Fry Aromatics: In the same pan, stir-fry garlic and ginger for 1 minute, then add cashews and toast for another minute.
  5. Make the Sauce Thicken: Pour the prepared sauce into the pan, stirring while it heats. Bring to a boil and thicken for 2-3 minutes.
  6. Combine Chicken with Sauce: Add fried chicken to the pan and toss to coat in the sauce.
  7. Garnish and Serve: Stir in sliced green onions and serve over rice or with vegetables.
