  • 2 pieces 8-inch Flour Tortillas or corn tortillas for a gluten-free option
For the Filling
  • 2 cups Shredded Colby Jack Cheese can substitute mozzarella or add pepper jack
  • 1 cup Cooked Chicken or Beans optional; can use black beans for vegetarian option
  • 1 cup Sautéed Bell Peppers or Spinach any cooked veggie can work
For Shaping
  • 1 piece Pumpkin Cookie Cutter (4-inch) a knife can also be used

Method
 

Step-by-Step Instructions
  1. Cut two pumpkin shapes from each tortilla using the cookie cutter or a knife.
  2. Carve fun faces into half of the pumpkin-shaped tortillas.
  3. Preheat the skillet over medium heat for about 2 minutes.
  4. Place one uncut tortilla in the skillet, sprinkle cheese over it, and add a carved tortilla on top.
  5. Cook the quesadilla for about 2-3 minutes, then flip it to cook the other side for an additional 2-3 minutes.
  6. Repeat the process with the remaining tortillas.
  7. Serve warm with salsa, guacamole, or sour cream.
