  • 1 cup Monterey Jack Cheese High-fat cheese for best melting quality
  • 2 large Eggs Add an extra egg if using coconut flour
  • 1 cup Almond Flour Can substitute with coconut flour
For the Filling
  • 1 pound Beef (thinly sliced ribeye or sirloin) Main protein
  • 1 cup Bell Peppers & Onions Customize with mushrooms if desired
  • 1 teaspoon Garlic powder To taste
  • 1 teaspoon Onion powder To taste

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and set aside a lined baking sheet.
  2. In a mixing bowl, combine the Monterey Jack cheese with almond flour. Add in the eggs and seasonings, mixing until a cohesive dough forms.
  3. In a skillet over medium heat, sauté the beef with chopped bell peppers and onions for 7-10 minutes, seasoning to taste.
  4. Dust a clean surface with almond flour and roll out the dough. Spoon the beef and vegetable mixture onto the dough and roll it up.
  5. Place the rolls seam side down on the prepared baking sheet and bake for 15-20 minutes until golden brown.
  6. Allow the rolls to cool on the tray for about 5 minutes before serving.
