- Spread a generous layer of room temperature salted butter on the outside of four slices of fresh sourdough bread.
- On the unbuttered side of two slices, layer a slice of sharp cheddar cheese followed by a spoonful of kimchi, and then add a slice of gouda cheese.
- Take the remaining two slices of sourdough and press them on top of the sandwiches, buttered sides facing outward.
- Preheat a cast iron skillet over medium-high heat for a couple of minutes until hot.
- Carefully place the sandwiches in the hot skillet and cook for about 5 minutes on each side.
- Once both sides are golden brown and the cheese has completely melted, carefully remove the sandwiches from the pan.
- Slice the sandwiches in half and serve warm, enjoying the mix of flavors.
