- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, kosher salt, baking powder, and baking soda until well combined.
- In a separate bowl, combine the plain Greek yogurt and lemon juice, stirring until smooth.
- Cream together the unsalted butter, granulated sugar, and lemon zest until light and fluffy, approximately 3-4 minutes.
- Add the eggs one at a time, mixing gently until just blended after each addition.
- Gradually add the dry ingredients to the wet mixture, alternating with the yogurt mixture, mixing until just combined.
- Gently fold in the grated zucchini with a spatula, being careful not to deflate the batter.
