Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your workstation.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté for 4-5 minutes until translucent.
  3. Incorporate diced carrot and diced celery, cooking for another 5 minutes until they begin to soften.
  4. Pour in heavy cream and stock, simmer for 5 minutes while stirring occasionally.
  5. Add lobster meat and frozen peas, fold gently and simmer for another 5 minutes.
  6. Stir in fresh thyme, lemon juice, salt, and black pepper. Set the filling aside.
  7. Fit one pie crust into a 9-inch pie dish and pour the lobster filling into it.
  8. Cover with the second pie crust, sealing the edges, and make several small slits on top.
  9. Beat one egg and brush it over the top crust for a golden finish.
  10. Bake in the preheated oven for 30-35 minutes until the crust is browned and flaking.
  11. Let cool for 10-15 minutes before serving warm.
