Ingredients
  

For the Slaw
  • 1 large Cucumber split lengthwise, seeded, and julienned
  • 1 ripe Mango or substitute with avocado
  • 1 cup Cabbage shredded, green or purple
  • 1 Bell Pepper julienned, baby or standard
  • 1 Jalapeño Pepper omit for milder salad
  • 1/4 cup Mint/Cilantro chopped
For the Dressing
  • 1/4 cup Sesame Oil or light olive oil
  • 1 teaspoon Kosher Salt or coarse sea salt
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 1 tablespoon Lime Juice or fresh lemon juice
  • 1 tablespoon Honey/Granulated Sugar maple syrup for vegan option
  • 1 tablespoon Sesame Seeds or replace with pumpkin seeds
  • 2 tablespoons Coconut Aminos/Soy Sauce or tamari for gluten-free
  • 1 teaspoon Fish Sauce omit for vegetarian option

Method
 

Step-by-Step Instructions
  1. Prepare the Dressing: In a small bowl, whisk together sesame oil, kosher salt, rice vinegar, lime juice, honey or sugar, sesame seeds, coconut aminos or soy sauce, and fish sauce. Mix until well-blended.
  2. Prepare the Vegetables: Slice cucumber lengthwise, remove seeds, julienne it. Dice mango, chop cabbage, slice bell pepper and jalapeño, chop herbs, and combine in a large mixing bowl.
  3. Combine & Toss: Pour the dressing over the mixed vegetables and gently toss until evenly coated.
  4. Serve: Serve immediately or allow to chill in the refrigerator before serving.
