  • 4 cups Sweet Potatoes Cut into wedges
  • 1/4 cup Maple Syrup
  • 2 tablespoons Olive Oil For roasting

  • 1 teaspoon Paprika Adjust to taste
  • 1 teaspoon Garlic Powder Adjust to taste
  • 1 teaspoon Onion Powder Adjust to taste
  • 1 tablespoon Sriracha Or use ketchup and vinegar
  • 1/4 cup Pistachios Chopped for topping
  • 1/4 cup Fresh Coriander Or parsley, chopped
For the Whipped Tahini Sauce
  • 1/3 cup Tahini
  • 1/2 cup Plain Yogurt Or Greek yogurt for thickness
  • 1 clove Garlic Minced
  • 2 tablespoons Lemon Juice Or lime juice

Method
 

Instructions
  1. Preheat the oven to 220°C (450°F) and gather your ingredients.
  2. Wash and cut the sweet potatoes into evenly-sized wedges. Toss with maple syrup, olive oil, salt, and pepper.
  3. Spread sweet potatoes on a paper-lined baking tray in a single layer.
  4. Drain and rinse chickpeas, pat dry and spread them on another baking tray.
  5. Roast sweet potatoes for about 30 minutes. Check chickpeas after 10 minutes and season with spices.
  6. Broil sweet potatoes for an additional 3-5 minutes for extra flavor.
  7. Whisk together plain yogurt, tahini, lemon juice, minced garlic, and olive oil in a bowl.
  8. Spread whipped tahini sauce on a serving plate, top with sweet potatoes and chickpeas, drizzle with maple syrup, and sprinkle with pistachios and coriander.
