Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, drain the rest, and set aside.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat until it shimmers.
  3. Sauté one chopped yellow onion in the hot oil for 2-3 minutes until translucent.
  4. Stir in 4 cloves of minced garlic and 1 tablespoon of butter, sautéing for an additional 30 seconds.
  5. Add the bite-sized chicken pieces, 1 tablespoon of Italian seasoning, 1 teaspoon smoked paprika, and a pinch of red pepper flakes. Season with salt and pepper. Cook for 3-5 minutes until browned.
  6. Pour in 1 cup of heavy cream, reserved pasta water, and ½ cup of parmesan cheese. Add sun-dried tomatoes and simmer for 3-4 minutes until thickened.
  7. Add the drained pasta to the skillet and toss to coat with the sauce. Garnish with fresh basil leaves before serving.
