  • 1 package Puff Pastry Sheets store-bought or homemade
For the Filling
  • 4 cups Fresh Spinach can substitute with baby kale or Swiss chard
  • 1 cup Ricotta Cheese or cottage cheese for a lighter alternative
  • 1/2 cup Parmesan Cheese or pecorino Romano
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt & Pepper for seasoning
For the Egg Wash
  • 1 large Egg or olive oil for a vegan substitute
Optional Ingredients
  • 1 tablespoon Olive Oil for sautéing spinach

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a heated skillet, add olive oil and sauté the chopped spinach for about 3-4 minutes until wilted. Combine the spinach with ricotta, Parmesan, garlic powder, salt, and pepper in a bowl.
  3. Roll out the thawed puff pastry sheets and cut them into 4-6 equal squares.
  4. Place 1-2 tablespoons of the spinach filling in the center of each pastry square. Fold the squares into triangles and press the edges together, sealing them with a fork.
  5. Beat the egg to create an egg wash, then brush it over the tops of each folded pastry.
  6. Bake the pastries in the preheated oven for 20-25 minutes until golden brown.
  7. Let the pastries cool for about 5 minutes before serving warm.
