Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a heated skillet, add olive oil and sauté the chopped spinach for about 3-4 minutes until wilted. Combine the spinach with ricotta, Parmesan, garlic powder, salt, and pepper in a bowl.
- Roll out the thawed puff pastry sheets and cut them into 4-6 equal squares.
- Place 1-2 tablespoons of the spinach filling in the center of each pastry square. Fold the squares into triangles and press the edges together, sealing them with a fork.
- Beat the egg to create an egg wash, then brush it over the tops of each folded pastry.
- Bake the pastries in the preheated oven for 20-25 minutes until golden brown.
- Let the pastries cool for about 5 minutes before serving warm.
