- Preheat your oven to 400°F (200°C) and pat the fish fillets dry with paper towels.
- In a mixing bowl, combine olive oil, lemon juice, sweet chili sauce, thyme, rosemary, oregano, parsley, lemon zest, minced garlic, salt, and pepper. Whisk until combined.
- Coat the fish fillets with half of the marinade and let them absorb the flavors for about 10 minutes.
- In a separate bowl, toss cherry tomatoes and olives with the remaining marinade.
- Spread the marinated tomatoes and olives in a greased baking dish, then place the coated fish on top.
- Bake for 15 to 20 minutes until the fish flakes easily and the tomatoes burst.
- Let the dish rest for 1 to 2 minutes, then garnish with fresh parsley and drizzle with pan juices.
