Ingredients
  

For the Meatballs
  • 1 pound Ground Beef
  • 2 cloves Garlic Cloves minced
  • 1 medium Onion finely chopped
  • 1 cup Breadcrumbs
  • 1 teaspoon Baking Soda
  • 1 cup Fresh Herbs Chopped (Parsley, Mint, Coriander)
  • 2 tablespoons Olive Oil extra virgin recommended
  • to taste Salt
  • to taste Pepper
For the Potatoes
  • 2 medium Potatoes cut into wedges
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • to taste Salt
  • to taste Pepper
For the Tzatziki
  • 1 cup Thick Greek Yogurt
  • 1 medium Cucumber grated, excess water removed
  • 1 tablespoon Fresh Dill or Mint chopped
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt
For the Salad
  • 2 cups Lettuce chopped
  • 1 cup Tomatoes chopped
  • 1 cup Cucumbers sliced
  • 1 medium Red Onion sliced
  • 1/2 cup Kalamata Olives pitted

Method
 

Preparation Steps
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper. Mix well and refrigerate for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Form the meatball mixture into small balls and arrange them on a baking sheet lined with parchment paper. Bake for 30-40 minutes, turning halfway, until golden brown.
  3. Wash and cut the medium potatoes into wedges. Toss them with olive oil, cumin, paprika, oregano, salt, and pepper. Roast in the oven while meatballs are cooking until golden and crispy.
  4. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill or mint, and salt. Stir until creamy and chill.
  5. Assemble the bowls with a bed of lettuce, topped with tomatoes, cucumbers, red onion, kalamata olives, roasted potatoes, meatballs, and tzatziki sauce.
