  • 2 tablespoons Olive Oil can substitute with canola oil
  • 1 medium Onion yellow or white onions are best
  • 3 cloves Garlic freshly minced for best flavor
  • 1 medium Red Bell Pepper green bell peppers can be used
  • 1 medium Zucchini can swap for any squash available
  • 1 cup Cherry Tomatoes or regular tomatoes if halved
  • 1 teaspoon Dried Oregano fresh herbs can be tripled
  • 1 teaspoon Dried Basil fresh herbs can be tripled
  • 1 teaspoon Paprika smoked paprika can add depth
  • to taste Salt
  • to taste Pepper
Optional Additions
  • 1/2 cup Feta Cheese skip for dairy-free option
  • 1/4 cup Fresh Parsley optional for garnish
  • 2 cups Cooked Rice or Quinoa can substitute with couscous or bulgur

Step-by-Step Instructions
  1. Prepare all ingredients: dice the onion and red bell pepper, mince the garlic, slice the zucchini, and halve the cherry tomatoes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sauté diced onion for 2-3 minutes until translucent, then add minced garlic and cook for an additional 30 seconds.
  4. Add ground beef, breaking it apart, and cook for 5-7 minutes until browned.
  5. Season the meat with salt, pepper, oregano, basil, and paprika; stir for 1-2 minutes.
  6. Add red bell pepper and zucchini, sauté for 3-4 minutes until they are slightly tender.
  7. Fold in cherry tomatoes and cook for an additional 2-3 minutes.
  8. If using, sprinkle feta cheese before turning off the heat.
  9. Serve the stir-fry over cooked rice or quinoa and garnish with parsley.
