Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, sauté finely chopped mushrooms over medium heat until moisture evaporates, about 7-10 minutes. Combine with diced beef tenderloin and Dijon mustard.
  3. Roll out puff pastry to about 1/8 inch thickness. Cut into squares or circles.
  4. Place a spoonful of the beef and mushroom filling in the center of each pastry. Fold and seal edges tightly.
  5. Refrigerate assembled bites for at least 30 minutes on a parchment-lined baking sheet.
  6. Whisk an egg and brush the tops of each bite for shine.
  7. Bake for 15-20 minutes until golden brown and puffed up.
