- Preheat your oven to 350°F (175°C).
- In a skillet, sauté finely chopped mushrooms over medium heat until moisture evaporates, about 7-10 minutes. Combine with diced beef tenderloin and Dijon mustard.
- Roll out puff pastry to about 1/8 inch thickness. Cut into squares or circles.
- Place a spoonful of the beef and mushroom filling in the center of each pastry. Fold and seal edges tightly.
- Refrigerate assembled bites for at least 30 minutes on a parchment-lined baking sheet.
